Raw chocolate truffles

There's something ever so decadent about truffles even saying the name. But the fact is as luxurious as they taste they are embarrassingly simple to make with very few ingredients

I like to make these in batches and freeze them. They're the perfect homemade present or after dinner delight. As ever, I encourage you to play around with recipe and coatings and let me know what your favourites are

This recipe makes around 36 truffles depending on the size you go for

Ingredients

280g dark chocolate, I like to aim for 70% cacao content but if you're feeling brave you can try raw and/or no-sugar chocolate

1 cup full-fat coconut milk

3 tablespoons coconut oil, melted

1 teaspoon vanilla extract

Coatings - shredded coconut, unsweetened cocoa and toasted almonds

As ever I use my trusty measuring spoons to make up the recipe even quicker but if you're not using them a cup equates to about 230g

Directions

Start by cutting the chocolate into small shards

Place the chocolate and melted coconut oil in a bowl and set it aside

Stir the coconut milk until well combined and place 1 cup in a saucepan over medium heat until simmering

Pour the coconut milk over the chocolate and coconut oil stir gently stopping as soon as it is well combined

Add the vanilla extract and lightly again

Transfer the mixture to a sealed container and chill in the fridge until solid (at least 4 hours)

This is the fun part! Using a melon baller or spoon scoop out 36 balls of chocolate. Roll each ball of chocolate between your palms to form a smooth ball and put on a plate ready for the last stage

If you're freezing the truffles you can do so now and coat them when they're ready to serve. You'll just need to bring them to room temperate before you coat them. Either way, they'll last in the fridge for a week once at room temperature.

Put your chosen coatings into bowls and individually place the truffles in making sure they're evenly coating. You can get really creative with the extras at this point but I think simple wins the day with a delicious coconut crumb or cocoa dusting
